Mango energy bites
Made these little beauts today for me and the boy courtesy of The minimilist baker with a few little changes.
Literally can't get enough of energy ball snacks at the moment, so easy and quick to make and can potentially provide a massive hit of omega 3, 6, protein, vitamins, and minerals all in one bite.
1/2 cup walnuts
1/2 cup dried unsweetened mango
5 pitted medjool dates
1 Tbsp milled seeds (I used Linwoods Chia, flax, apple, cinnamon mix)
1/4 cup unsweetened desiccated coconut
Soak the dried mango in warm water for 5-7 minutes. Then drain and lay on a towel and pat off excess moisture. Set aside.
Add nuts to a food processor and mix into a fine meal.
Add pitted dates and soaked mango, seeds, and coconut to the food processor and mix until a dough forms.
Roll in to balls and cover in more shredded coconut.
Store at room temperature up to 3-4 days, the refrigerator 1 week, or in the freezer up to 1 month.
